I can’t believe summer is here already! Wasn’t January just a few days ago? Time has a way of flying by, doesn’t it! That old Fiddler on the Roof tune, Sunrise/Sunset, is so appropo for the last couple of weeks where Baby is concerned. Where does the time ago? *sigh* These are some pictures from the big day. In fact, I can’t believe that Baby has finally graduated from high school. I could swear she was just a baby a few months ago. *sigh*
Because Baby graduated on a Thursday night our celebration didn’t take place until Friday night with family and friends. One of our best friends traveled all the way from Scottsdale, AZ to be with us for the momentous passage. Mary and Baby have a really special relationship. Baby texts Mary anytime Mom and Dad are irritating. The two of them decided to recreate a photo we took of them seven years ago, although Mary had to switch places because Baby has outgrown everyone! They even used the same, well-worn bear! LOL What a difference seven years makes. Although I’m jealous of Mary. The woman hasn’t aged a bit.
So how about some book news?? Percy is just being obstinate! The man, as much as I love him, is just playing games with me at the moment. So I’m not sure what the actual release date will be. Once you’ve downloaded WICKED TEMPTATIONS for FREE! Perhaps you might like to try out one of the recipes I’m including this month. We’re very traditional when it comes to the meals we eat on holidays. They don’t vary much from year to year.
4th of July Menu: BBQ Pork Blade Steaks, Baked Beans, Deviled Eggs, Lima Bean Salad, Macaroni Salad, and Missy Potatoes.
We finish off the day at Dogwood Dell in Richmond where the Richmond Concert band performs its annual rendition of Tchaikovsky’s 1812 Overture, which includes the firing of the National Guard’s howitzers during the musical piece. While listening to the band, we enjoy my signature Butter Scrumptious Cake with homemade lemonade.
I’m getting hungry just thinking about it!! *grin* The Butter Scrumptious cake is something I only make once year. Not because it’s difficult, but because I’ll eat the whole darn thing by myself otherwise, and as you can tell by the pictures above. I DO NOT need any more cake! LOL
Lima Bean Salad
20oz frozen lima beans
2 cup sliced fresh mushrooms
1 cup chopped red onion
1/3 cup Chopped ripe olives
1/4 cup Snipped parsley
1 4oz jar diced pimento, drain
1/3 cup White wine vinegar
1/4 cup Olive oil (or vegetable)
2 Cloves garlic minced
1/2 tsp Sugar
1/2 tsp Salt
1/2 tsp Lemon juice
1/8 tsp Pepper
Cook lima beans according to package. Drain, rinse with cold water; drain again. In a large mixing bowl, combine beans, mushrooms, onion, olives, parsley and pimento. For dressing, combine vinegar, oil, garlic, sugar, and salt, lemon juice, and pepper. Cover, shake to combine. Pour over bean mixture. Toss bean mixture and dressing in a plastic bag to get thorough coating. Chill 3 to 24 hours, stirring/tossing once or twice. Best if chilled overnight and allowing to marinate. Serves 8-10, 168 calories per 1/2 cup serving.
I’ve never liked lima beans, but this is the one recipe where I’ll actually eat them. So if you don’t like lima beans, I’m betting you’ll enjoy this dish!
Butter Scrumptious Cake
2 cup Flour
1/2 cup Butter
2 tsp Baking powder
8 oz Cream cheese
1/2 tsp Baking soda
2 Eggs, unbeaten
1/2 tsp Salt
1 tsp Vanilla
1 1/4 cup Sugar
1/2 cup Milk
1/2 cup Butter
1 cup Flour
1 cup Brown sugar
Cream the butter and cream cheese. Gradually add sugar into creamed mixture. Blend well.
Blend in the eggs and vanilla. Beat well. Mix together remaining dry ingredients. Add dry ingredient mixture, and alternate with the milk. Pour into a greased 13×9″ pan and sprinkle with topping. Bake at 350F or 30-40 minutes.
For Topping, cut butter into flour and brown sugar until crumbly. I generally make one and a half for the topping as I like the brown sugar taste. It makes the cake very, very moist.

I’ve known Jenny Gardiner for some time now. She’s bright, funny, and her stories are always clever and entertaining. Please note that Bad to the Throne only has one Amazon review. While I’ve not read this particular book, I’ve read Jenny’s work in the past, and I feel comfortable recommending her books as fun reads.

Contemporary is the genre, but be ready for some fun and laughs.

That about wraps it up for all my news this month. I hope you have a fabulous Fourth of July and that the weather is pleasant and the fireworks spectacular as we celebrate the birth of our nation. Although we might seem heavily divided at the moment, I know we are as one when the chips are down. We’ve displayed that time and again when tragedy occurs and people come out to help that even despite our disagreements, we are united. Our spirit has shown through whenever a terrible event happens. We are strong, and we need to celebrate that on the fourth.
